These are supposed to be for lunchboxes! I prefer to think of them as my own version of lembas.





Basic mixture

This is like the tar -

125 g butter
3 tbsp golden syrup
300 g good quality high cocoa solids chocolate.

Melt these together in a thick bottomed pan, taking care JUST to melt them and not to boil or burn the mixture. It will go dark brown and gloopy and very smooth.

This is the rocky bit -

200 g sweet crisp biscuits, smashed up so there are crumbs but also pieces of biscuit.
100 g mini marshmallows or big marshmallows snipped into mini sized pieces with scissors.

Line a square 7 inch baking tin with foil. Put the smashed up biscuits and marshmallows into a mixing bowl and stir them to blend. Pour on about 3 quarters of the chocolate mixture and stir thoroughly to coat all the biscuit and marshmallow bits. Once completely covered, tip into the baking tin and press it down a bit to smooth the top. Pour on the remaining chocolate mixture to make a fudgy topping. You'll probably need to spread it out a bit.

Cover the tin with Clingfilm or a plate and leave to cool for a couple of hours. Then you should be able to lift it out and cut into 15 fingers.

Dust with a little icing sugar to make it look pretty, if you're into that kind of thing, then eat one.

Wrestle with your conscience and eat another then groan and promise yourself a trip to the gym.

You could be inventive and use ginger biscuits and bits of crystallised ginger, or pistachio/brazil/walnuts, or smashed up crunchie bars, or - well you name it really. That basic fudgy sauce would go over anything.
