Fish Pie

I've made this a couple of times recently so thought I'd share the recipe. Friday night we thought we'd have a bit of a feast so we started with asparagus [boil gently, wrap in proscuitto or parma ham, put a slice of brie on top and hove under the grill until the cheese softens] then the pie [see below] and Rocky Road with Joe's Ice Cream for pudding.



Ingredients

Guess quantities

Smoked cod or haddock
Lump of salmon
Broccoli
Strong cheese
Milk
Seasoning
Mashable spuds
Cornflour
Butter

Method

3 pans - in one boil spuds, in another boil broccoli, in the third put chunks of fish in about half a pint of milk and simmer until cooked. Use a slotted spoon to lift the fish pieces out and put them in the pie dish. Drain the potatoes and if any of the milk has drained from the fish in the bottom of the dish you can use it to cream the spuds. Use the milk in the saucepan with butter and cornflour to make a white fish flavoured sauce. Season to taste. Drain the cooked broccoli [or caulifower if the thought of eating something green makes your inner kiddie panic] and mix the florets with the fish. Grate a load of cheese - amounts vary according to how cheesey you like your sauces - and stir into the sauce until it melts. Pour over the fish and broccoli. Use a spoon to cover the mixture with a layer of mash and a fork to make interesting shapes on the top. If your feeling healthy leave it at that, if you feel lavish grate more cheese on top. Put in oven or under grill to brown/melt.

Result

OM nom nom nom and it's pretty - pink and yellow and green in creamy-white.

Conclusion

Worth doing because it's not hard, it doesn't take long, it tastes and looks good and OH how the kitties LOVE you if you let them have the fish skin!
